PERFECT STEAK À LA CARELIA GRILL

INGREDIENTS
500 g Angus Beef EntrecôteÂ
fresh rosemary
saltÂ
ground pepperÂ
olive oil (not extra virgin)
INSTRUCTIONS
Remove the meat from the package and let it breathe for about 20 minutes. It is undesirable to cook meat cold, otherwise, the juices will not be evenly distributed over the fibers and your steak will not be so juicy. After that, cut the meat into steaks 2-3 cm thick (= 2 fingers).
Place Carelia Grill Cast Iron Pan on the grilling level and adjust the level closer to the fire so that the pan heats up faster. While the frying pan is warming up, season the steaks (keep in mind that marbled meat doesn't need to be marinated beforehand!). Just put the steaks on a board and season with plenty of salt and pepper (remember, beef likes pepper 😉).
When the pan starts to smoke slightly, add some oil to the pan and a couple of sprigs of rosemary. Then add the steak - it should start to sizzle! Fry for about 2 minutes on each side until a crust forms and fry for another 2 minutes on each side. So you'll get medium rare roasting. For the medium roasting level, add 1 extra minute on each side.
After roasting the steak, let it rest for about 5-7 minutes. This will allow the juice to be evenly distributed over the meat, which will give it incredible softness and taste. If you have a sprig of rosemary, put it on the steak, as it will emphasize the taste of the meat. After that, cut the steak, holding the knife slightly at an angle of 45 degrees.
Serve the steak with a sprig of rosemary and a side dish of grilled vegetables (we've made a recipe for that as well - click the link to check that out!).
